Choc Cheese Muffins & Chocolate Chips Streusel Pound Cake

Masa berlalu begitu cepat sekali...dah nak masuk minggu yang ketiga cuti sekolah....belum ada kesempatan untuk bawa anak Nur jalan-jalan...bosan juga dia kalau cuti dia masih kena ngadap buku....kadang nur tengok muka dia masam aje, memang Nur tak bertolak ansur, hari hari mesti ulangkaji semula pelajaran...tapi tetap ada break juga...boleh mengadap pc atau bermain. Apa yang Nur perhatikan anak Nur jarang sekali menonton tv sama seperti Nur. Nur jarang menonton tv melainkan kalau hubby ada rumah, baru Nur ikut menonton. Nanti bila lagi seminggu nak buka sekolah baru lah bawa anak Nur jalan jalan. Kalau berjalan anak beranak aje macam tak seronok gitu...sebab tahun ini hubby kena simpan cuti...maalum lah Nur sekarang selalu kan pergi check-up....nak juga stand by cuti mana lah tau tiba tiba Nur kena surgery. Okay lah lupakan cerita Nur.

Chocolate Cheese Muffins
Bahan-Bahan
140 g coklat masakan, dipotong kecil
100 g cream cheese
80 g mentega
2 biji telur gred A*
1 camca teh esen vanilla*(*dicampur dan pukul rata dgn garfu)
60 g gula halus
100 g tepung gandum*
2 camca teh baking powder*(*digaul dan diayak)
Sedikit kepingan badam utk hiasan (optional)
Cara Cara
1. Panaskan oven pada suhu 180C, alas acuan muffin dengan paper cup atau gunakan muffin cup jenis keras. Ketepikan.
2. Masukkan coklat masakan, cream cheese dan mentega dalam bekas tahan panas, cairkan dengan cara "double-boiler" (dengan meletak mangkuk yang berisi bahan2 tadi di atas air mendidih), kacau hingga semua cair dan sebati. Angkat.
3. Masukkan gula dan telur, kacau menggunakan whisk (kalau benda ni tak de juga, boleh guna senduk) hingga sebati.
4. Masukkan tepung dan gaul hingga rata dan mesra. Sudukan ke dalam muffin cup tadi 3/4 penuh, tabur dengan sedikit kepingan badam. Buat hingga siap. Bakar 20 - 25 minit atau hingga masak mengikut oven masing2. Sejukkan atas jaringan sebelum dihidangkan.

Chocolate Chips Streusel Pound Cake ~ adapted from: Kitchen Snippets.

Ingredients
1 3/4 cup all purpose flour
1 tsp baking powder
1/4 tsp salt
1 stick (4 0z)) unsalted butter
3/4 cup granulated sugar
2 large eggs
1 tsp pure vanilla extract
1/2 cup sour cream
1/2 cup chocolate chips
Streusel
3 tbsp of flour
2 tbsp of butter
2 tbsp light brown sugar
1/4 tsp ground cinnamon
Method
1. Preheat oven to 325F. Lightly butter a loaf pan.
2. For the streusel combine flour, butter, brown sugar and cinnamon in the bowl and mix well. Set it aside.
3. Sift together the flour, baking powder and salt. Set aside. In mixer, cream the butter and sugar on medium speed until light and fluffy, about 2-3 minutes. . Then add eggs, one at a time, mixing well after each addition. Mix in vanilla extract.
4. On low speed, add a third of the flour and mix until the flour is just barely combined. Then mix in half of the sour cream. Repeat with another third of the flour, the remaining half of the sour cream and then the last third of the flour. Stir in chocolate chips with a spoon or spatula.
5. Spread the batter into your prepared loaf pan. Sprinkle the streusel over the batter. Bake until golden brown and a cake tester comes out clean, about 50-60 minutes. Let the cake cool in the pan for 15 minutes. Then carefully remove the cake from the pan and let it cool completely on a rack.
